Sweet Potato Casserole

One of Kenny Thacker’s (Bluffdale, Utah) favorite’s for the holidays

1 lb. Pork sausage

1/4 Cup onions, chopped

2 Eggs

2/3 Cup whole milk

6 Cups sweet potatoes, mashed (or 3 – 1 lb. 10 oz. cans)

Salt to taste

  • Brown pork sausage and onion, drain fat off.
  • Blend in eggs, milk and sweet potatoes, mix well.
  • Pour into a shallow casserole dish, smoothing top with back of a spoon.

TOPPING:

1/4 Cup butter, melted

1/2 Cup brown sugar, firmly packed

1/4 Cup heavy cream

Boil together, stirring occasionally, for three minutes.

Pour topping evenly over potatoes and bake in 350º oven for 30-40 minutes.
